Banana Ice Cream Sandwich Raweo

Here is an improvised version of a raw Oreo that Rocio and I made last night with the ingredients that we had. We had all the ingredients for the cookie but we were missing cashews to make the filling so we improvised with banana ice cream (by just blending frozen bananas). So it turned out to be more of a banana ice cream sandwich raweo. I tried to leave a few cookies leftover to cut them out round and try to make them look more like oreos but those little babies flew within an hour of making. They are that good.

Ingredients

Cookie
  • 1 cup of dates
  • 3/4 cup of oats
  • 1 tablespoon of cocoa powder



Filling
  • 1 frozen banana (cut up into small pieces)


Instructions

  1. Put the oats in a blender and blend until it becomes a fine powder like flour.
  2. Add the cup of dates and cocoa powder and blend/process until it becomes a gooey consistency and the ingredients come together into a ball (I use a Thermomix which is a blender that can process as well but the recipe asked for a processor).
  3. Spread out the dough onto a tray and put in the fridge for half an hour or more.  This way the dough will become firmer and it will be easier to cut into cookie shapes.
  4. Finally blend the frozen banana until it becomes an ice cream consistency (it took around 2 minutes on my blender but it was the first time I made it so I kept stopping it to check it)
  5. Finally fill in the cookies with banana ice cream and voila! There are many alternatives to this. You can replace the filling with any kind of nut butter, or add cinnamon or cocoa powder to the banana ice cream. Maaany possibilities!
