Diced Chicken with Almonds

Very simple recipe! I had leftover diced chicken and decided to get somewhat creative (at least for my standards). 

Ingredients

3 tbsp. cooking oil
1 clove minced garlic

1 tsp. salt
2 c. diced raw chicken
2 tbsp. soy sauce
1 c. diced celery
1/2 c. mushrooms (optional)
1 c. boiling water
1 tbsp. cornstarch
1/4 c. cold water
1/2 c. toasted almonds 


Start by heating up the oil in a frying pan and add the garlic. Shortly after, add the chicken pieces and sauté for 3 minutes. Stir in the soy sauce. I'm always very generous with this one, I'm a big fan and it always transforms the dishes' flavor... but careful so as not to overdo it...

Now it's time for the celery, the mushrooms and the boiling water.

Finally, add the cornstarch mixed with cold water, and lower the heat to let it simmer. I would have ideally added more cornstarch to thicken the sauce and make it more viscous, but the boyfriend prefers it nice and watery. He says that's the way the Chinese like it     :)  .....  >.<   ......

Add the chicken with plenty of sauce to a bowl of rice and sprinkle with toasted almonds. Toast them yourself if you only have raw almonds by heating them up in a pan.
